In the Xiaomi ecosystem, different modules are responsible for storing backups and deleted files. The first place to look for missing images is the built-in cart, which is that in the MIUI shell and the new HyperOS, deleted files don't disappear instantly, they're moved to a buffer that's stored for 30 days, and it's a security mechanism that allows you to correct a user error.
To access this section, you need to open the Gallery app. At the bottom of the screen, go to the Albums tab. Scroll down to the very end of the list where the Other Albums block is located. That's where the Deleted folder is located.
Inside, you'll see all the images that were deleted in the last month, and the system automatically sorts them by their deletion date. If you find the right photo, click on it to view it. In the lower right corner, a recovery button will appear.

Using Mi Cloud to Recover Data
Mi Account holders can use the Mi Cloud, which is a proprietary cloud, and if the gallery sync is enabled on the phone, deleted photos can be saved to the cloud, especially when switching to a new smartphone or after resetting.
